Để món cá nướng được ngon, không bị ướt hay đọng nước làm tanh cá bạn nên sử dụng đá nướng.
Cá quả làm sạch, khía chéo trên mình cá. Sả và riềng thái mỏng rồi giã nát. Cho sả, riềng, gia vị, hạt tiêu, bột nghệ và dầu ăn vào bát, trộn đều. Dùng hỗn hợp này để phết lên mình cá, ướp cá khoảng 10 phút.

Đổ đá nướng vào khay đặt ở rãnh dưới cùng của lò nướng. Làm nóng lò ở nhiệt độ 250ºC trước 10 phút. Đặt vỉ cá lên rãnh giữa của lò, nướng khoảng 20 phút hoặc đến khi cá chín tùy nhiệt độ từng lò
